Tomato Soup (Serves 4)
This soup takes just 20 minutes to make, including preparation time.
Ingredients
- 2 onions, chopped
- 2–3 whole garlic cloves, peeled
- 2 tbsp ghee
- 3 cartons (or cans) 400 gr crushed tomatoes
- Sea salt, to taste
- Black pepper, to taste
- Chili powder, to taste
- Water, if needed
Instructions
- Heat the ghee in a large saucepan over medium-low heat.
- Add the chopped onions and whole garlic cloves. Cook until the onions are soft and translucent.
- Season with sea salt, black pepper, and chili powder according to your taste.
- Add the crushed tomatoes and stir well.
- Let the soup simmer gently over low heat for about 15 minutes.
- Blend the soup with an immersion blender until smooth and creamy.
- If the soup is too thick, add a little water until you reach your preferred consistency.
- For extra flavor and richness, stir in an additional spoonful of ghee before serving.
For an Italian touch, blend in a handful of fresh basil and mix well before serving. Garnish with fresh basil leaves.
