Tomato soup

Tomato Soup (Serves 4)

This soup takes just 20 minutes to make, including preparation time.

Ingredients

  • 2 onions, chopped
  • 2–3 whole garlic cloves, peeled
  • 2 tbsp ghee
  • 3 cartons (or cans) 400 gr crushed tomatoes
  • Sea salt, to taste
  • Black pepper, to taste
  • Chili powder, to taste
  • Water, if needed

Instructions

  1. Heat the ghee in a large saucepan over medium-low heat.
  2. Add the chopped onions and whole garlic cloves. Cook until the onions are soft and translucent.
  3. Season with sea salt, black pepper, and chili powder according to your taste.
  4. Add the crushed tomatoes and stir well.
  5. Let the soup simmer gently over low heat for about 15 minutes.
  6. Blend the soup with an immersion blender until smooth and creamy.
  7. If the soup is too thick, add a little water until you reach your preferred consistency.
  8. For extra flavor and richness, stir in an additional spoonful of ghee before serving.

For an Italian touch, blend in a handful of fresh basil and mix well before serving. Garnish with fresh basil leaves.
